Availability and quality of water in milk production

Abstract

The quality of water used in the processes of milk production can pose risks to animal health, product quality and consumer health. It is estimated that most dairies use in its production process, sources of untreated water, compromising milk quality and animal health. The water used in cleaning milking environment, both teats of animals and milking equipment can act as a route of transmission of microorganisms to the mammary gland, as well as compromising the quality of milk, since the high water count bacteria allows the placement of the bacterial population directly to the milk. Are considered water quality criteria for the physical, chemical and microbiological contaminants. The water quality is presented as a key element to success and profitability of milk production systems, as well as for ensuring animal health, food security and environmental sustainability.
